Pickled Northern

Good recipe to use for any white fish.

1. 2 lbs fileted northern , little less than 1/2 of a crock pot of filets ( or any other white fish)
2. 1 gallon container ( plastic or glass) I use a crock pot liner with a lid.
3. Pickling salt
4. Pickling spices ( remove cloves)
5. White vinegar
6. semi sweet white wine (optional)
7. 1 or 2 yellow onions
8. Water

Step 1
Thouroughly wash filets and cut into 1 inch cubes or how ever large you want.
Combine 2 quarts water and 1 cup of pickling salt into gallon container
dissolve salt and add filets
cover and refridgerate for 48 hrs.


Step 2
After 48 hours remove fish from salt brine and rinse thouroughly
Rinse gallon container
Place rinsed filtes back into rinsed container
Add 1-2 cups of white vinegar to filets (enough vinegar to cover filets)
cover and refridgerate for 24 hours


Step 3
After 24 hours discard vinegar from soaked filets
Drain filets well
Mix 3 cups of white vinegar and 2 cups sugar into saucepan and bring to boil slowly
Slow boil mixture approximately 5 minutes
In the last minute of boiling add 1/4 cup of pickling spice.
Remove from heat and let cool
Add 1/2 to 1 cup semi sweet white wine to mixture (optional)

Step 4
Slice onions
Wash and rinse well 2 quart jars
begin to stack filets and onions ( first a layer of fish then layer of onions) into each jar When stacked near the top pour mixture to completely cover filets and onions.
Cover jar with a lid
Refridgerate for 72 hours
Enjoy filets on crakers or on their own.
Keep refridgerated - last several weeks in fridg.
