Bacon Cream Perch

This is a good one, you can use any fresh water fish. - here ya go!

six to eight perch fillets - ( 3 to 4 fish)
1 &1/2 cup heavy cream
2-3 table spoons Cream Cheese (softened)
six or seven strips of bacon (Fried and grease saved in frying pan)
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1/4 cup mayo
1 cup Parmesan cheese

Fry bacon & set a side to cool leave bacon grease in the pan ( crumble bacon when cooled)
stir the 1/2 cup of heavy cream into the hot bacon grease & bring to a slow boil
blend in the cream cheese to make sauce thick - add more heavy cream if too thick or put some of the cheese into the sauce if too thin
place some of the bacon crumbles into the sauce
Set aside and keep sauce warm

Lay fish fillets onto baking sheet lined with non-stick foil
Mix salt pepper & garlic and season the fish (careful not to over season)
brush the fish fillets with mayo
place about 1 table spoon of Parmesan cheese on each fillet
place in 400 degree oven till done or cheese starts to brown (don't over bake the fillets) 10-15 minutes depending upon fillet thickness

When done baking spoon sauce over fillets & sprinkle with the rest of bacon crumbles - Enjoy!

this is low carb for those who are watching their carb intake.
